-Ingredients-

2 tbsp. Unsalted butter or non-hydrogenated vegan margarine, 1/4 cup jasmine rice, 2/3 cups organic low sodium vegetable broth or water, one small red potato, peeled and diced into bite-size pieces, one medium yellow onion, diced into bite-size pieces (about 2 cups), four cloves garlic, minced, 2/3 cup frozen corn kernels (thawed), 3 tbsp. chopped fresh cilantro leaves plus a few sprigs for garnish (or use parsley if you don't have cilantro), black pepper to taste, salt to taste

Rosemary and Garlic White Bean Soup

Yield: 2-3 servings or one large bowl.

Ingredients: 1 can white beans or 1 ½ cups dry beans, 4 cups water, three tablespoons olive oil (plus more for garnish), 31/2 teaspoons salt, two cloves garlic, minced

Other: 12 sprigs of fresh rosemary for garnish (or eight sprigs dried)

Directions:

1. In a large saucepan, combine the olive oil and garlic over medium heat. Fry the garlic for 1 minute, then add the white beans. Stir frequently and sauté for about 5 minutes until heated through about 5 more minutes.

 

 

The curry is mouth-watering and is amazing with rice. Preparing this dish is not an easy task but the end result tastes amazing.

 

Ingredients: 5 cups of water, 1 tablespoon ground turmeric, 2 tablespoons ground cumin, 2 tablespoons paprika

3 medium sweet potatoes (skin on) diced into bite sized pieces (2 pounds), 3 cups canned black eyed peas (drained and rinsed), 1 cup canned diced tomatoes (with their juices), 2 tbsp honey or brown sugar

Directions:

1. Boil the water for 5 minutes with turmeric, cumin, paprika and salt to taste. Add the sweet potatoes and boil until they are fork tender but still firm to the bite.

2. Add the black eyed peas, tomatoes and honey. Since the potatoes have been boiling for a while, the rest of the ingredients should be added immediately or they will not absorb all of the flavors from the spices since they have been soaking in water for so long
